(KCPW News) What would you eat for lunch if your total food budget for the week were 22 dollars? That's the reality for food stamp recipients - and for Democratic State Representative Jennifer Seelig, who has committed to the Food Stamp Challenge. KCPW's Julie Rose met up with Seelig at lunch during Interim Legislative meetings yesterday for our daily check-in.
Seelig is halfway through her week on a food stamp budget and she says sick of eating ramen noodles. Tune in tomorrow for another installment of her daily report on the experiment. Community leaders and elected officials around the state - and the country - have taken the Food Stamp Challenge to draw attention to the challenges of low-income Americans.
